Ingredients

  • 8 ounces (225 g) dry soba noodles
  • 1 tablespoon neutral oil
  • 8 ounces (225 g) fresh shiitake mushrooms, tough stems removed and caps sliced
  • 2 teaspoons finely grated fresh ginger
  • 6 cups (1.4 liters) low-sodium vegetable broth
  • 3 tablespoons reduced-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons granulated sugar
  • 10 ounces (280 g) firm tofu, drained and cut into 3/4-inch cubes
  • 4 ounces (115 g) baby spinach
  • 3 scallions, thinly sliced
  • 1 sheet toasted nori, cut into fine strips

Instructions

  1. Slice the mushrooms and scallions, cube the drained tofu and cut the nori with clean kitchen scissors. Bring a large pot of unsalted water to a boil for the soba.
  2. Meanwhile, heat the oil in a soup pot over medium-high heat. Cook the mushrooms for 5–6 minutes, stirring, until softened and lightly browned. Add the ginger and stir for 30 seconds without scorching it.
  3. Pour in the vegetable broth and add the soy sauce, rice vinegar and sugar. Bring to a gentle simmer, stirring to dissolve the sugar.
  4. Add the tofu carefully and simmer for 5 minutes until heated through. Avoid a rolling boil that can break the cubes. Stir in the spinach and cook for 1–2 minutes until wilted.
  5. Cook the soba in the separate boiling water according to its package, commonly 4–6 minutes. Taste a strand near the end: it should be tender without turning mushy. Drain and rinse briefly under warm running water to remove loose starch.
  6. Divide the drained noodles among four deep bowls. Ladle an equal share of the hot broth, mushrooms, tofu and spinach into each, loosening the noodles gently with chopsticks or a fork.
  7. Scatter over scallions and nori immediately before serving so the nori does not dissolve in the pot. Taste the broth before adding any extra soy sauce; brands vary considerably in saltiness.

Long soba noodles, tender mushrooms and warm broth make a satisfying lunch during the New Year holiday. Tofu adds substance without making the bowl heavy, while scallions and a few strips of nori give a fresh finish.

This is an original Japanese-inspired home adaptation using vegetable broth, not a claim to a traditional dashi recipe. Cook the noodles separately so excess starch does not cloud and thicken the soup.

Choosing soba

Many soba noodles contain wheat as well as buckwheat. Check the package for allergens and follow its cooking time; 100 percent buckwheat noodles can be more delicate.

Store separately

For planned leftovers, refrigerate noodles and broth separately so the noodles do not absorb all the liquid. Reheat the broth thoroughly, then add noodles just long enough to warm.

Frequently asked questions

Can I replace shiitake?

Sliced cremini mushrooms work; the flavor is less intense. Use the same weight.

Is this gluten-free?

Not as written: ordinary soba and soy sauce may contain wheat. Suitable certified noodles and tamari require label checks and may change cooking time.
