Ingredients

  • 450 g fully cooked sprouted quinoa
  • 300 g zucchini, diced
  • 1 can (400 g) ordinary cooked chickpeas, drained and rinsed
  • 2 tablespoons olive oil, divided
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped parsley

Instructions

  1. Heat oven to 425°F (220°C). Prepare the sprouted quinoa separately; its initial cooking is additional to the assembly time.
  2. Toss zucchini and drained chickpeas with 1 tablespoon oil, cumin and salt. Spread on a baking sheet.
  3. Roast for 20 to 25 minutes, stirring halfway, until zucchini is tender.
  4. Warm cooked quinoa in a covered saucepan with a splash of water until steaming throughout. If using refrigerated cooked quinoa, reheat to 165°F (74°C).
  5. Divide quinoa into three bowls, add the roasted mixture, and finish with remaining oil, lemon and parsley. The canned chickpeas here are not sprouted.
  6. Cool leftovers promptly in shallow containers and refrigerate within 2 hours (1 hour if ambient temperature exceeds 90°F / 32°C). Use refrigerated leftovers within 3 to 4 days; reheat cooked leftovers to 165°F (74°C). Follow any shorter product storage limit.

Choose the correct sprouted ingredient

Use fully cooked sprouted quinoa, not raw germinated quinoa. Prepare a food-grade sprouted grain product by its package directions before measuring.

Before you begin

This is an original Carolina Cooking recipe, not an independently kitchen-tested formulation or a claim of traditional national origin. The ingredient list specifies the edible form and whether its weight is taken before or after cooking. Do not replace a cooked ingredient with the same weight of a dry product.

Timing and portions

The recipe serves 3. Allow 15 minutes to gather and prepare the ingredients, plus approximately 30 minutes for the cooking or assembly described below. When the ingredient list calls for a fully cooked sprouted grain or legume, its separate package preparation time is additional. Follow the doneness cues, not just the clock.

Handling and storage

Use food-grade products, follow their storage directions and discard recalled or spoiled ingredients. Keep uncooked sprouts separate from ready-to-eat food. Do not add a raw-sprout garnish to a cooked dish. Refrigerate leftovers promptly; see the final recipe step for storage.

Estimated nutrition per serving

Calculated from ingredient amounts and USDA food-composition data; not laboratory tested. Cooked ordinary quinoa approximates sprouted quinoa. Assumes 240 g drained chickpeas, with unsalted cooked chickpeas as the reference. Values vary with brand, sprouting, cooking and portion size. All measured oil and salt are included; water and optional accompaniments are excluded. Vegetable-broth sodium varies substantially by brand. Blank nutrients mean unavailable data, not zero.
