Ingredients

  • 450 g fully cooked sprouted rye berries
  • 350 g beets, peeled and diced into 1 cm pieces
  • 2 tablespoons olive oil, divided
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon chopped dill
  • 60 g feta made from pasteurized milk, crumbled
  • 1/4 teaspoon salt

Instructions

  1. Heat oven to 400°F (200°C). Prepare the sprouted rye berries according to their package before weighing; their initial cooking time is additional.
  2. Toss beet cubes with 1 tablespoon oil and salt. Spread on a baking sheet.
  3. Roast for 30 to 40 minutes, turning once, until tender.
  4. Warm cooked rye in a covered saucepan with a splash of water until steaming throughout; reach 165°F (74°C) when reheating refrigerated grain.
  5. Mix warm rye with beet, remaining oil, vinegar and dill. Divide into three bowls and top with feta.
  6. Cool leftovers promptly in shallow containers and refrigerate within 2 hours (1 hour if ambient temperature exceeds 90°F / 32°C). Use refrigerated leftovers within 3 to 4 days; reheat cooked leftovers to 165°F (74°C). Follow any shorter product storage limit.

Choose the correct sprouted ingredient

Use fully cooked sprouted rye berries, not rye flour or rye grass. Rye contains gluten even after sprouting.

Before you begin

This is an original Carolina Cooking recipe, not an independently kitchen-tested formulation or a claim of traditional national origin. The ingredient list specifies the edible form and whether its weight is taken before or after cooking. Do not replace a cooked ingredient with the same weight of a dry product.

Timing and portions

The recipe serves 3. Allow 15 minutes to gather and prepare the ingredients, plus approximately 45 minutes for the cooking or assembly described below. When the ingredient list calls for a fully cooked sprouted grain or legume, its separate package preparation time is additional. Follow the doneness cues, not just the clock.

Handling and storage

Use food-grade products, follow their storage directions and discard recalled or spoiled ingredients. Keep uncooked sprouts separate from ready-to-eat food. Do not add a raw-sprout garnish to a cooked dish. Refrigerate leftovers promptly; see the final recipe step for storage.

Estimated nutrition per serving

Calculated from ingredient amounts and USDA food-composition data; not laboratory tested. Assumes 450 g cooked berries from 150 g dry rye. Ordinary rye approximates sprouted rye; water absorption varies. Values vary with brand, sprouting, cooking and portion size. All measured oil and salt are included; water and optional accompaniments are excluded. Vegetable-broth sodium varies substantially by brand. Blank nutrients mean unavailable data, not zero.
