Corn and potato snacks
Two different approaches to a shareable snack: coated grilled corn and pan-fried potato patties.

Mexico
Elotes with Lime and Cotija
Sweet grilled corn gets a creamy lime coating, crumbled cotija and a dusting of chili for a colorful Mexican-inspired street-food snack.
Before you choose: Allow about 25 minutes. For a less messy serving, the recipe also explains how to serve the cooked kernels and toppings in individual cups.

India
Aloo Tikki with Mint Yogurt
Crisp-edged potato patties seasoned with cumin, coriander and ginger are paired with cool mint yogurt in this Indian-inspired street-food snack.
Before you choose: Allow the drained mashed potatoes to cool before shaping. Serve the mint yogurt separately so the patties keep their crisp surface.
Chicken skewers
Compare a soy-mirin glaze with a peanut sauce. Both versions use a grill or grill pan.

Japan
Chicken and Scallion Yakitori
Bite-size chicken thigh pieces and scallions are grilled on skewers with a glossy soy-mirin glaze for a Japanese-inspired street-food plate.
Before you choose: Divide the glaze before cooking so the finishing portion stays separate from raw-chicken utensils. The recipe portions twelve skewers among four people.

Indonesia
Chicken Satay with Peanut Sauce
Sweet-soy marinated chicken skewers meet a warm peanut-lime sauce and crisp cucumber in this Indonesian-inspired street-food recipe.
Before you choose: The total includes a 30-minute refrigerated marinade. Prepare the peanut sauce separately while the chicken marinates.
Sandwiches and rice rolls
Choose crisp bread with pork and pickles, or sliced rice rolls with vegetables and egg.

Vietnam
Pork Banh Mi with Quick Pickles
Roasted pork tenderloin, quick-pickled carrot and daikon, cucumber and cilantro fill crisp rolls with a light mayonnaise spread in this Vietnamese-inspired sandwich.
Before you choose: Start the quick pickles while you prepare the pork. Drain them well and assemble the rolls near serving so the bread stays crisp.

South Korea
Vegetable and Egg Gimbap
Sesame-seasoned rice wraps around firm egg strips, carrot, spinach and pickled radish inside toasted seaweed for a colorful Korean-inspired handheld meal.
Before you choose: Have all fillings ready before rolling and use short-grain rice. This version makes four rolls, each sliced into eight pieces.
Cheese breads and griddle cakes
Check the flour or starch carefully: these two doughs are not interchangeable.

Brazil
Pao de Queijo Cheese Breads
Small tapioca-starch cheese breads bake with a delicate crust and chewy center in this Brazilian-inspired snack, made with mozzarella and Parmesan.
Before you choose: Use tapioca starch, not cassava flour or tapioca pearls. Twenty small cheese breads make ten servings of two; the dough is sticky and scoopable.

Colombia
Cheese Arepas
Golden griddled corn cakes enclose melted mozzarella in this Colombian-inspired arepa recipe, with a crisp outside and a tender, warm center.
Before you choose: Use precooked cornmeal labeled masarepa. The method makes four cheese-filled arepas and cooks them in two batches unless your griddle holds all four.
Sesame rings and curry sauce
A slower yeast bake and a quicker sausage plate offer two very different projects.

Turkey
Sesame Simit Rings
Twisted yeast-bread rings are dipped in grape molasses and coated in sesame before baking into golden, chewy Turkish-inspired simit.
Before you choose: This yeast dough needs about an hour to rise plus shaping and baking time. The listed total is about 2 hours 20 minutes; a cool room can extend the rise.

Germany
Currywurst with Homemade Curry Sauce
Browned sausage slices are topped with a gently spiced tomato-curry sauce in this German-inspired street-food plate, with extra curry powder to finish.
Before you choose: Choose fully cooked, ready-to-eat sausage for this method. Fresh raw bratwurst cannot simply be swapped into the same cooking schedule.
Plan before you cook
Choose by your available time
Elotes take about 25 minutes, currywurst 35 and yakitori 40. Banh mi and arepas are about an hour; satay, gimbap and cheese breads about 65 minutes; aloo tikki about 70. Simit is the longer yeast-dough project at about 140 minutes.
Choose one main project
For a first attempt, make one recipe and a simple accompaniment instead of coordinating several unfamiliar methods. Skewers need turning, gimbap needs assembly space, and simit needs time for dough to rise.
Shop for the exact staple
Masarepa, tapioca starch, short-grain rice and bread flour each behave differently. Check the full recipe before substituting. Sauces may contain soy, fish, peanuts or sesame, and the cheese breads contain dairy and eggs.
