German-Inspired Currywurst with Homemade Curry Sauce

Ingredients

  • 4 fully cooked ready-to-eat bratwurst-style sausages, about 100 g each (400 g total)
  • 2 teaspoons neutral oil (10 ml), divided
  • 1 small onion (100 g), very finely diced
  • 1 garlic clove, minced
  • 1 cup tomato passata (250 g)
  • 2 tablespoons ketchup (30 g)
  • 1 tablespoon apple cider vinegar (15 ml)
  • 2 teaspoons brown sugar (8 g)
  • 2 teaspoons mild curry powder, plus 1/2 teaspoon for finishing
  • 1/2 teaspoon sweet paprika
  • 1/4 cup water (60 ml), plus a little more if needed
  • 1/4 teaspoon black pepper

Instructions

  1. Check that the sausage is labeled fully cooked and ready to eat; fresh raw bratwurst requires a different cooking schedule. Set out a saucepan for sauce and a skillet for the sausages.
  2. Warm 1 teaspoon oil in the saucepan over medium-low heat. Add onion and cook for 6 to 8 minutes until soft. Stir in garlic, the 2 teaspoons curry powder and paprika for 30 seconds without letting the spices scorch.
  3. Add passata, ketchup, vinegar, sugar, measured water and black pepper. Stir well and bring to a gentle simmer. Partly cover to reduce splashing and cook for 12 to 15 minutes, stirring often.
  4. The sauce should coat a spoon but still pour. Add water by the tablespoon if too thick. Leave slightly textured or mash the softened onion with a spoon; a smooth puree is optional, not necessary.
  5. Meanwhile, heat the remaining teaspoon oil in the skillet over medium heat. Add sausages and turn regularly for about 8 to 12 minutes until browned and heated through to 165 F (74 C), following any stricter package directions.
  6. Transfer sausages to a clean board and cut into bite-size slices. Divide one sausage among each of four shallow plates or bowls. Handle carefully because the interior and juices will be hot.
  7. Spoon one-quarter of the hot curry sauce over each portion. Dust all four portions with the remaining half-teaspoon curry powder, distributing it lightly rather than leaving a thick dry mound.
  8. Serve immediately with small forks. If offering bread or fries, serve them separately and account for them as additional food, not part of this recipe estimate.
