Ingredients

  • 2 cups precooked white cornmeal for arepas (240 g; masarepa)
  • 1 3/4 cups warm water (420 ml), plus a little extra only if needed
  • 1/2 teaspoon fine salt
  • 1 tablespoon unsalted butter (14 g), melted
  • 160 g low-moisture mozzarella, grated and divided into 4 portions
  • 2 teaspoons neutral oil (10 ml), for the skillet

Instructions

  1. Stir the salt into the warm water in a large bowl. Add melted butter, then gradually stir in the precooked cornmeal until all dry pockets disappear. Knead gently in the bowl for about 1 minute.
  2. Let the dough rest for 5 minutes so the cornmeal hydrates. It should feel soft and pliable, not runny or crumbly. If edges crack when pressed, knead in water a teaspoon at a time; if very wet, allow another short rest before adjusting.
  3. Divide dough into 4 equal portions. Divide each portion into two pieces and flatten into thin rounds between your palms or sheets of baking parchment. Keep the unused dough covered so it does not dry out.
  4. Place 40 g mozzarella in the center of one round, leaving a clear border. Cover with the second round and press the edges securely together, smoothing into a cake about 4 inches across and 1/2 to 3/4 inch thick. Repeat to make four filled arepas.
  5. Warm a heavy nonstick skillet or griddle over medium-low heat and brush with half the oil. Add two arepas, leaving space to turn them. Cook for 6 to 8 minutes on the first side until golden, not dark brown.
  6. Turn with a wide spatula and cook the second side for another 6 to 8 minutes. Partly cover if needed to help heat the centers; the interior dough should be set and the cheese melted. Lower the heat if the crust browns before the center cooks.
  7. Keep the first pair warm while cooking the remaining pair with the rest of the oil. A large griddle can cook all four together. If an arepa is unusually thick, allow extra low-heat cooking rather than serving raw-feeling dough.
  8. Rest for 2 to 3 minutes before serving one per person. The cheese inside is hot. Cut with a knife and fork or wrap the lower half in food-safe paper once cool enough to hold.

These cheese-filled arepas use precooked cornmeal to make a soft dough that can be shaped without yeast or a long rise. A shallow mozzarella filling melts as the cakes cook slowly on a skillet, creating a contrast between the lightly crisp exterior and tender center.

This Colombian-inspired home version makes four substantial arepas. Arepa styles vary across Colombia and Venezuela; this is one accessible adaptation rather than a claim to every regional method. The ingredient must be precooked cornmeal for arepas, not ordinary polenta, raw cornmeal or masa harina.

Correct cornmeal

Look for precooked cornmeal labeled for arepas or masarepa. Different brands absorb different amounts of water. Ordinary cornmeal and masa harina are not direct substitutes for this formula.

Storage

Refrigerate cooked cheese-filled arepas promptly in covered containers and use within 3 days. Reheat gently in a skillet or oven until the center reaches 165 F (74 C). Freezing for up to 2 months is possible; thaw refrigerated before reheating.

Cooking thickness

Moderate thickness and low-medium heat are the keys to a cooked center. Overfilled arepas can leak cheese, while very thick cakes may brown long before the dough sets.

Frequently asked questions

Why are the edges cracking?

The dough is usually too dry or has not rested long enough. Add small amounts of warm water and knead until pliable, then reshape.

Can I make them without cheese?

Yes, shape plain cakes from the same dough. Their cooking time may shorten and the nutrition estimate will be lower; this recipe includes all the mozzarella.

Nutrition notes

Nutrition values are approximate editorial estimates per serving, not laboratory measurements or a verified nutritional analysis. Actual values vary with brands, portion size and substitutions. These original recipe drafts have not been kitchen-tested; cooking times are guides.

Estimate counts 240 g dry precooked cornmeal, all mozzarella, butter and skillet oil divided among four arepas. It excludes extra fillings and dips. Cheese and cornmeal brands may vary.
