Ingredients

  • 30 g fresh onion seed sprouts
  • 4 large eggs
  • 60 ml pasteurized milk
  • 40 g cheddar made from pasteurized milk, grated
  • 1 teaspoon olive oil
  • 2 tablespoons water
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Heat oven to 375°F (190°C). Lightly oil two 300 ml ovenproof dishes. Rinse and drain onion sprouts.
  2. Heat the remaining oil in a small skillet. Add sprouts and water, cover and cook for 5 minutes, then uncover and stir for another 3 minutes until thoroughly cooked. Follow longer package directions if supplied.
  3. Whisk eggs, milk, salt and pepper in a bowl. Fold in cooked sprouts and half the cheddar.
  4. Divide mixture between the dishes, place on a baking sheet and sprinkle with remaining cheese.
  5. Bake for 15 to 20 minutes until the centers reach 160°F (71°C) and no liquid egg remains. Rest briefly before serving; the dishes will be hot.
  6. Cool leftovers promptly in shallow containers and refrigerate within 2 hours (1 hour if ambient temperature exceeds 90°F / 32°C). Use refrigerated leftovers within 3 to 4 days; reheat cooked leftovers to 165°F (74°C). Follow any shorter product storage limit.

Choose the correct sprouted ingredient

Use sprouts grown from edible onion seed, not green shoots removed from an old onion bulb.

Before you begin

This is an original Carolina Cooking recipe, not an independently kitchen-tested formulation or a claim of traditional national origin. The ingredient list specifies the edible form and whether its weight is taken before or after cooking. Do not replace a cooked ingredient with the same weight of a dry product.

Timing and portions

The recipe serves 2. Allow 15 minutes to gather and prepare the ingredients, plus approximately 30 minutes for the cooking or assembly described below. When the ingredient list calls for a fully cooked sprouted grain or legume, its separate package preparation time is additional. Follow the doneness cues, not just the clock.

Handling and storage

Use food-grade products, follow their storage directions and discard recalled or spoiled ingredients. Keep uncooked sprouts separate from ready-to-eat food. Do not add a raw-sprout garnish to a cooked dish. Refrigerate leftovers promptly; see the final recipe step for storage.

Browse the sprout varieties and preparation guide. Ingredients, product labels and preparation matter more than the word sprouts alone.

Estimated nutrition per serving

Calculated from ingredient amounts and USDA food-composition data; not laboratory tested. Onion sprouts are approximated with alfalfa sprouts. Uses four 50 g eggs and whole milk. Values vary with brand, sprouting, cooking and portion size. All measured oil and salt are included; water and optional accompaniments are excluded. Vegetable-broth sodium varies substantially by brand. Blank nutrients mean unavailable data, not zero.
