Ingredients

  • 300 g fresh mung bean sprouts
  • 200 g cremini mushrooms, sliced
  • 1 tablespoon neutral cooking oil
  • 2 garlic cloves, finely chopped
  • 2 teaspoons finely grated fresh ginger
  • 2 tablespoons reduced-sodium soy sauce
  • 3 tablespoons water, plus more as needed
  • 1 teaspoon rice vinegar
  • 2 scallions, thinly sliced
  • 1 teaspoon toasted sesame oil

Instructions

  1. Check that the package contains mung bean sprouts, not soybean sprouts. Discard recalled, slimy or musty-smelling sprouts. Wash hands and utensils, rinse the sprouts under cool running water and drain; rinsing does not eliminate all harmful bacteria.
  2. Heat the neutral oil in a wide skillet over medium-high heat. Add mushrooms and cook for 5 to 7 minutes, stirring, until softened and their released liquid has mostly evaporated.
  3. Lower the heat to medium. Stir in garlic and ginger for about 30 seconds, then add the sprouts, soy sauce and water. Toss carefully, cover and cook for 5 minutes, stirring halfway through.
  4. Uncover and continue cooking for about 3 to 5 minutes, stirring so all sprouts are heated evenly. They should be thoroughly cooked and softened throughout, not left raw or merely warmed. Add a tablespoon of water if the pan dries; extend cooking as needed and follow any longer package cooking directions. Timing alone does not establish safety.
  5. Stir in scallions and cook for another minute. Remove from heat and add rice vinegar and sesame oil. Divide into four side portions and serve hot. Do not add raw sprouts as a garnish.
  6. Refrigerate leftovers promptly in a shallow covered container within 2 hours; use within 3 to 4 days and reheat thoroughly to 165°F (74°C).

Choose the right bean sprout

This recipe uses the long pale sprouts of mung beans. Soybean sprouts have different cooking needs and are not a direct timed substitution. The mushrooms provide a savory base while ginger and vinegar keep the seasoning bright.

Serving and substitutions

Serve as a vegetable side with rice and your preferred cooked protein. Rice is not included in the quantities. For a wheat-free version, use a certified gluten-free soy sauce; it still contains soy. Sesame oil can be omitted for a sesame-free variation, after checking every product label.

Cook thoroughly

Raw or lightly cooked sprouts can carry harmful bacteria. This recipe deliberately cooks the sprouts rather than aiming for a barely warmed, raw center. Cooking is not a way to salvage spoiled or recalled food.
