Ingredients

  • 400 g fully cooked sprouted adzuki beans, drained
  • 400 g sweet potato, peeled and diced into 1 cm pieces
  • 1 onion (150 g), chopped
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 can (400 g) chopped tomatoes
  • 600 ml vegetable broth
  • 1 tablespoon lime juice
  • 1/4 teaspoon fine salt

Instructions

  1. Prepare the sprouted adzuki beans as described in the ingredient note before starting the stew; their separate cooking time is not included below.
  2. Heat oil in a saucepan and soften onion over medium heat for 6 minutes. Add garlic and cumin and stir for 30 seconds.
  3. Add sweet potato, tomatoes and broth. Bring to a simmer and cook partially covered for 15 to 20 minutes until the potato is easily pierced.
  4. Add the cooked sprouted beans and salt. Simmer for 10 minutes, stirring, until the whole stew is steaming hot.
  5. Mash a few pieces of potato against the pan to thicken. Stir in lime juice; divide among four bowls.
  6. Cool leftovers promptly in shallow containers and refrigerate within 2 hours (1 hour if ambient temperature exceeds 90°F / 32°C). Use refrigerated leftovers within 3 to 4 days; reheat cooked leftovers to 165°F (74°C). Follow any shorter product storage limit.

Choose the correct sprouted ingredient

Use fully cooked sprouted adzuki beans, weighed after draining. Prepare the sprouted beans separately according to their package, until tender throughout; raw sprouts and ordinary canned beans are not the specified ingredient.

Before you begin

This is an original Carolina Cooking recipe, not an independently kitchen-tested formulation or a claim of traditional national origin. The ingredient list specifies the edible form and whether its weight is taken before or after cooking. Do not replace a cooked ingredient with the same weight of a dry product.

Timing and portions

The recipe serves 4. Allow 15 minutes to gather and prepare the ingredients, plus approximately 35 minutes for the cooking or assembly described below. When the ingredient list calls for a fully cooked sprouted grain or legume, its separate package preparation time is additional. Follow the doneness cues, not just the clock.

Handling and storage

Use food-grade products, follow their storage directions and discard recalled or spoiled ingredients. Keep uncooked sprouts separate from ready-to-eat food. Do not add a raw-sprout garnish to a cooked dish. Refrigerate leftovers promptly; see the final recipe step for storage.

Estimated nutrition per serving

Calculated from ingredient amounts and USDA food-composition data; not laboratory tested. Cooked ordinary adzuki beans approximate cooked sprouted beans. Values vary with brand, sprouting, cooking and portion size. All measured oil and salt are included; water and optional accompaniments are excluded. Vegetable-broth sodium varies substantially by brand. Blank nutrients mean unavailable data, not zero.
