Ingredients

  • 3/4 cup (90 g) buckwheat flour
  • 1/4 cup (30 g) all-purpose flour
  • 1 large egg, for the batter
  • 1 cup (240 ml) water, plus 1–3 tablespoons if needed
  • 1/4 teaspoon fine salt
  • 2 tablespoons (28 g) unsalted butter, melted, divided
  • 4 large eggs, for the filling
  • 4 ounces (115 g) thinly sliced ready-to-eat cooked ham
  • 1 cup (100 g) grated Gruyere
  • 1 tablespoon finely chopped chives
  • 1/8 teaspoon black pepper

Instructions

  1. Whisk both flours and salt in a bowl. Beat in the batter egg and the measured cup of water gradually until smooth. Stir in half the melted butter. Cover and refrigerate for 30 minutes to hydrate the flour; the resting time is included in the total.
  2. Stir the rested batter. It should pour like light cream; add the extra water a tablespoon at a time only if too thick. Heat a 10-inch nonstick crepe pan over medium heat and brush with a little of the remaining butter.
  3. Pour in one-quarter of the batter and immediately tilt the pan to cover its base thinly. Cook for 2–3 minutes until the surface is dry and the edge lifts, then turn with a broad spatula and cook for about 1 minute. Transfer to a plate and repeat for four crepes.
  4. In a second nonstick skillet, use a little of the reserved butter to cook the four filling eggs, in batches if needed. Cover briefly over medium-low heat and cook until both whites and yolks are firm; do not rely on browning underneath as the doneness test.
  5. Return one crepe to the first pan over low heat. Place one-quarter of the ham and cheese in the middle, leaving a broad border. Warm for 1–2 minutes until the cheese begins to melt and the ham is hot.
  6. Place a cooked egg in the center. Fold four edges inward to form a square, leaving the egg visible. Warm briefly, then slide onto a plate. Repeat with the remaining crepes, ham, cheese and eggs.
  7. Divide the chives and black pepper over the four portions and serve promptly. A broad spatula supports the folded base and prevents the filling from slipping out.

A thin, nutty buckwheat crepe makes a savory start to New Year morning. Ham and Gruyere warm inside folded edges, while a separately cooked egg finishes the center. The method keeps breakfast manageable without asking you to cook a raw egg on a delicate crepe.

This original home version is inspired by French buckwheat galettes, not a claim to a special French New Year tradition. A little wheat flour helps the crepes fold without tearing, so this recipe is not gluten-free.

Make ahead

Cook the unfilled crepes a day ahead, cool, separate with parchment and refrigerate covered. Rewarm individually before filling. Prepare the eggs just before serving.

Pan and batter

A well-seasoned or nonstick pan helps the delicate crepes release. If the first one tears, let it cook longer before turning and make sure the batter is thin enough to spread.

Frequently asked questions

Can I omit the ham?

Yes; use cooked, well-drained mushrooms instead. The flavor and nutrition will change.

Is buckwheat wheat?

Buckwheat is a different plant, but this particular batter contains all-purpose wheat flour and is not gluten-free.
