Ingredients
- 2 cups (160 g) old-fashioned rolled oats, not steel-cut oats
- 1 1/2 cups (360 ml) 2% milk, plus optional extra for serving
- 1 1/2 cups (360 g) plain 2% Greek yogurt
- 2 medium apples (about 300 g after coring), coarsely grated
- 1 tablespoon fresh lemon juice
- 1 tablespoon honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon fine salt
- 1 cup (150 g) fresh blueberries, washed and dried
- 1 cup (150 g) sliced fresh strawberries, washed and dried
- 1/3 cup (30 g) sliced almonds
Instructions
- Prepare clean containers. Set out a large mixing bowl and four covered breakfast containers or jars, each with enough room for roughly 1 1/2 cups plus toppings. Clear space in the refrigerator before mixing; this is a chilled dish and should not soak on the counter.
- Combine the creamy base. Whisk together the milk, yogurt, honey, vanilla, cinnamon and salt until evenly mixed. Scrape the bottom of the bowl so the honey does not remain in a sticky layer. The base should look smooth apart from the cinnamon flecks.
- Grate the apples. Wash and core the apples, leaving the peel on if you like its texture. Coarsely grate them and immediately toss with the lemon juice. Include the apple juices rather than squeezing them out, since they contribute moisture and flavor to the oats.
- Mix in the oats and apple. Fold the rolled oats and grated apple into the yogurt mixture until all the flakes are coated. Check the bottom and edges for dry pockets. The mixture will look a little looser now than it will after the oats absorb liquid overnight.
- Portion and refrigerate. Divide the mixture evenly among the four containers and cover. Refrigerate for at least 8 hours at 40°F (4°C) or below. The total recipe time includes this overnight rest; no stovetop cooking is required.
- Prepare the toppings separately. Wash and dry the berries thoroughly and refrigerate them in a separate covered container. Keep the almonds dry and separate. If using delicate berries, prepare them in the morning instead of the night before for the best texture.
- Check the morning consistency. Stir one portion from the bottom. If it feels too stiff, mix in a little extra milk, 1 tablespoon at a time. If it seems loose, stir again and allow a few minutes for the texture to settle before adding toppings.
