Ingredients

  • 8 ounces fresh baby spinach
  • 1 pound strawberries, hulled and sliced
  • 1 cup pecan halves, toasted
  • 4 ounces crumbled feta cheese
  • 1/4 small red onion, thinly sliced
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Place the spinach, strawberries, toasted pecans, feta, and red onion in a large salad bowl.
  2. In a small jar or bowl, whisk the olive oil, honey, Dijon, apple cider vinegar, salt, and pepper until smooth and glossy.
  3. Taste the dressing and adjust with a small splash of vinegar or a little more honey if needed.
  4. Drizzle about two-thirds of the dressing over the salad and toss gently until the spinach is lightly coated.
  5. Serve immediately with the remaining dressing on the side so the salad stays crisp.
