Ingredients

  • 1 pound (450 g) peeled seeded pie pumpkin, cut into 3/4-inch cubes
  • 2 tablespoons olive oil, divided
  • 1/2 teaspoon fine salt, divided
  • 1/4 teaspoon ground black pepper
  • 5 cups (1.2 liters) low-sodium vegetable broth
  • 1 small onion (100 g), finely chopped
  • 2 garlic cloves, minced
  • 1 1/4 cups (250 g) arborio rice
  • 1 tablespoon finely chopped fresh sage
  • 1 tablespoon (14 g) unsalted butter
  • 1/2 cup (45 g) finely grated Parmesan cheese
  • 1 tablespoon fresh lemon juice
  • 8 small fresh sage leaves, for finishing

Instructions

  1. Heat the oven to 425°F / 220°C. Toss the pumpkin with 1 tablespoon of oil, 1/4 teaspoon of the salt and the pepper. Spread on a parchment-lined baking sheet and roast for 25–30 minutes, turning once, until tender with lightly browned edges.
  2. While the pumpkin roasts, bring the broth to a gentle simmer in a small saucepan and keep it warm over low heat. Heat the remaining tablespoon of oil in a wide heavy saucepan. Briefly fry the whole sage leaves for 20–30 seconds, remove with a slotted spoon and drain on a plate.
  3. Add the onion to the sage-scented oil and cook over medium heat for 5–6 minutes until soft. Add the garlic and chopped sage and stir for 30 seconds. Stir in the dry rice for 1 minute to coat the grains.
  4. Add about 3/4 cup of hot broth and stir until most of it is absorbed. Continue adding broth about 1/2 cup at a time, stirring regularly and waiting until the pan is nearly, but not completely, dry before the next addition. Maintain a gentle simmer.
  5. After about 18 minutes, begin tasting the rice. Continue cooking and adding broth until the grains are tender with a slight bite, usually 20–25 minutes in total. You may not need all the broth; if you run out, use hot water.
  6. Stir in half the roasted pumpkin, pressing a few cubes against the side of the pan. Remove from the heat and fold in the butter, Parmesan, lemon juice and remaining 1/4 teaspoon salt. Add enough broth to make the risotto flow gently when the pan is tilted.
  7. Rest for 2 minutes, then divide among four shallow bowls. Top with the remaining pumpkin and crisp sage leaves. Serve immediately before the rice thickens.

Golden pumpkin makes this risotto naturally festive for Halloween, without food coloring or elaborate decorations. Roasting gives the cubes browned edges, while stirring some of them into the rice adds body and gentle sweetness.

This original Italian-inspired dinner relies on short-grain risotto rice rather than cream for its texture. Keep the broth warm, stir often but not aggressively, and taste the rice as it approaches tenderness.

Pumpkin choice

Use a culinary pie pumpkin or substitute the same weight of butternut squash. Large decorative carving pumpkins are often watery and less flavorful. Do not substitute canned puree for the full weight of cubes without adjusting the recipe.

Leftover texture

Risotto is best freshly cooked. Refrigerate leftovers promptly in shallow containers and reheat with broth until hot throughout; the grains will be softer. Use vegetarian-rennet Parmesan-style cheese if needed.

Frequently asked questions

Do I need wine?

No. This version uses broth throughout and a little lemon at the end for brightness.

Can I use long-grain rice?

Not for the same result. Arborio releases starch that creates the creamy sauce; long-grain rice needs a different method and amount of liquid.

Nutrition notes

Nutrition is an approximate editorial estimate per serving, not a laboratory analysis. Brands, substitutions and portion sizes change the values. These original recipe drafts have not been kitchen-tested; use the stated doneness checks as well as timing.

Estimate includes all oil, cheese and butter and assumes the full five cups of broth are used. Sodium depends strongly on broth and cheese brands.

Allergens: Milk; Check vegetable broth for celery, soy or other allergens. Check all product labels.

Food storage and handling

Refrigerate perishable leftovers in shallow containers within 2 hours, or within 1 hour above 90°F / 32°C. Keep at 40°F / 4°C or colder, use within 3–4 days and reheat cooked leftovers to 165°F / 74°C. Follow any shorter storage guidance given in the recipe.
