Ingredients

  • 1 1/2 cups (210 g) whole almonds
  • 1 cup (150 g) diced candied orange peel
  • 1/2 cup (75 g) chopped dried figs, stems removed
  • 3/4 cup (95 g) all-purpose flour
  • 2 tablespoons (12 g) unsweetened cocoa powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 1/4 teaspoon fine salt
  • 1/2 cup (170 g) honey
  • 1/2 cup (100 g) granulated sugar
  • 1 tablespoon (14 g) unsalted butter, plus a little for the pan
  • 1 tablespoon (8 g) powdered sugar, for finishing

Instructions

  1. Heat the oven to 300°F (150°C). Butter an 8-inch (20 cm) round cake pan and line the base and sides with parchment. Lightly butter the parchment as well.
  2. Spread the almonds on a tray and toast for about 8 minutes, until fragrant, watching closely. Leave the oven on. Chop the figs and orange peel into small, similar pieces.
  3. In a large heatproof bowl, mix the almonds, fruit, flour, cocoa, cinnamon, ginger, cloves and salt until the pieces are evenly coated.
  4. Combine honey and granulated sugar in a small heavy saucepan. Warm over medium-low heat, stirring until dissolved, then simmer until a candy thermometer reads 240°F (116°C). Remove from the heat and stir in the tablespoon of butter.
  5. Immediately pour the hot syrup over the dry mixture. Use a sturdy spoon to fold thoroughly until no dry flour remains. The mixture will be stiff; avoid touching the hot syrup.
  6. Scrape into the prepared pan. Press level using the back of an oiled spoon or a sheet of parchment, keeping hands protected from the hot mixture.
  7. Bake for about 30–32 minutes, until the edges are set and the surface has a light sheen. It should remain slightly yielding in the center, not bake into a hard biscuit.
  8. Cool in the pan for 30 minutes, then lift out carefully and cool completely for about 90 minutes more. Peel away the parchment and dust with powdered sugar.
  9. Cut into 16 thin wedges with a sturdy sharp knife. Store airtight in a cool place for up to 5 days, or freeze well wrapped for up to 2 months.

Panforte-inspired slices are small but full of flavor: toasted almonds, citrus peel, honey and spice are bound into a dense confection rather than a fluffy cake. A thin wedge is enough alongside coffee or tea after Christmas dinner.

Have the lined pan and dry ingredients ready before heating the syrup. The mixture becomes firm quickly as it cools, so this is a recipe where preparation matters more than complicated mixing. Keep children away from the hot sugar.

Texture and slicing

This is a dense confection. Let it cool fully before cutting; slicing warm panforte makes it appear sticky and underdone. If refrigerated, allow it to soften slightly before slicing.

Ingredient choices

Use soft dried figs and candied peel intended for baking. Very dry fruit draws moisture from the mixture. Do not replace honey with an equal amount of granulated sugar.

Frequently asked questions

Is this a gluten-free dessert?

No. It contains wheat flour and almonds. A tested gluten-free adaptation would need separate development.

Can I make it ahead for Christmas?

Yes. Make it a day or two ahead, wrap well after cooling and dust with sugar before serving.
