Ingredients

  • 1 tablespoon (14 g) unsalted butter
  • 1 tablespoon olive oil
  • 1 medium yellow onion (150 g), diced
  • 2 garlic cloves, minced
  • 1 pound (450 g) carrots, peeled and sliced
  • 1 medium potato (200 g), peeled and diced
  • 4 cups (960 ml) low-sodium vegetable broth
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon fine salt, plus more only if needed
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon fresh lemon juice
  • 1/4 cup (60 ml) heavy cream
  • 4 slices crusty bread (about 40 g each), to serve

Instructions

  1. Cut the carrots and potato into small, even pieces so they soften at roughly the same time. Have the broth measured before starting.
  2. Melt the butter with the oil in a large saucepan over medium heat. Add the onion and cook for 5–6 minutes, stirring, until soft but not deeply browned.
  3. Add the garlic and cook for 30 seconds. Stir in the carrots, potato, thyme, salt and pepper, coating the vegetables in the buttery onion mixture.
  4. Pour in the broth and bring to a boil. Reduce to a gentle simmer, cover loosely and cook for 20–25 minutes, until both carrots and potato crush easily against the side of the pan.
  5. Remove from the heat. Blend with an immersion blender, keeping the head submerged to prevent hot splashes. If using a countertop blender, cool slightly, work in small batches and follow its hot-liquid instructions.
  6. Stir in the lemon juice. If the soup is too thick, add a little hot water. Return to low heat until steaming, then taste before adding any extra salt.
  7. Divide among four bowls and swirl one tablespoon of cream onto each. For an optional web, draw a cream spiral and pull a toothpick from the center outward in several lines. Serve with bread.
  8. Refrigerate cooled portions promptly in shallow containers within 2 hours. Use within 3–4 days and reheat to 165°F (74°C). Add fresh cream decoration after reheating.

This French-inspired vegetable soup gets its orange color from carrots rather than pumpkin. Potato provides body, thyme adds a gentle savory note, and a small swirl of cream gives it a festive finish. It is a warm, uncomplicated lunch before Halloween activities.

For a playful serving, draw a cream spiral on each bowl and pull a clean toothpick outward to suggest a web. The decoration is optional; the soup works equally well as an everyday autumn lunch.

Make it dairy-free

Replace butter with olive oil and finish with an unsweetened plant cream. Check its ingredients for nuts or other allergens; nutrition will differ.

Smoothness and thickness

Blend only until smooth. Potatoes can become gluey if processed excessively. Add liquid a little at a time rather than diluting the entire pot at once.

Frequently asked questions

Can I freeze it?

Freeze without the cream for up to 2 months. Thaw in the refrigerator, reheat thoroughly and add cream at serving time.

Can I leave off the Halloween decoration?

Absolutely. A simple swirl or no cream at all is fine.
