Ingredients

  • 3/4 cup (170 g) unsalted butter, softened but still cool
  • 7 tablespoons (90 g) granulated sugar, divided: 80 g for the dough and 10 g for the top
  • 2 teaspoons finely grated lemon zest, yellow part only
  • 1 teaspoon vanilla extract
  • 2 cups (240 g) all-purpose flour, spooned and leveled
  • 1/4 cup (30 g) cornstarch
  • 1/4 teaspoon fine salt

Instructions

  1. Line the pan. Line an 8-inch square metal baking pan with parchment, leaving an overhang on two sides. Measure the flour and cornstarch carefully, preferably by weight. Keep the extra 10 g of topping sugar separate so it does not all go into the dough.
  2. Flavor the sugar. Rub the lemon zest into the 80 g of dough sugar with your fingertips until fragrant. This helps distribute the zest through the shortbread. Avoid grating the white layer beneath the peel, which can give the dough a bitter edge.

  7. Bake gently. Bake for about 30–35 minutes, until the surface looks dry and the outer edges turn a light golden color. The middle should feel set when lightly touched but will still be fragile. Avoid waiting for the entire surface to become brown.
  8. Cut while warm. Let the pan rest for 5 minutes, then use a thin knife to cut fully along the scored lines. Leave the pieces in the pan to cool for about 40 minutes before lifting. Cutting early defines the portions; moving them early can cause crumbling.
