Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 ½ cups milk
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • 2 tbsp melted butter
  • Pinch of salt
  • Lingonberry jam (or strawberry jam as a substitution)

Instructions

  1. In a mixing bowl, whisk together the flour, eggs, milk, sugar, vanilla extract, melted butter, and a pinch of salt until smooth.
  2. Heat a non-stick frying pan over medium heat. Lightly grease with butter or cooking spray.
  3. Pour ¼ cup of the batter into the pan and swirl to form a thin, round pancake.
  4. Cook for 1-2 minutes until the edges start to lift, then flip and cook for another 1-2 minutes.
  5. Repeat with the remaining batter.
  6. Serve the pancakes with lingonberry jam (or any preferred jam). Enjoy!
